Volgograd handball championship to feature shrimp and veal

More than 2.7 million rubles (about $27,000 at current rates) have been allocated for catering at the Russian women's handball championship in Volgograd.

A tender for catering services has been posted on the government procurement portal for the Russian women«s handball championship to be held in Volgograd. The total contract cost is estimated at a minimum of 2,763,200 rubles (about $27,600 at current rates).

The contract execution is scheduled from 16 February to 31 December of this year. During this time, the contractor is obliged to provide catering for 20 events during the Superleague tournament among women«s teams.

The customer is the «Dynamo Handball Sports School». The service provider is required to prepare and deliver dishes according to the approved menu, provide necessary dishes and equipment, as well as restaurant service involving waiters, loaders, and coordinators.

The buffet menu includes the following items:

  • Tiger shrimp in tempura batter with sweet and sour chili sauce (22 portions);
  • Canapés with persimmon, peach or pear (seasonal), mini mozzarella, cured meat, and berry sauce (22 portions);
  • Canapés with chorizo and cornichon (22 portions);
  • Bruschetta with lightly salted salmon, arugula, cream cheese, and capers (11 portions);
  • Crostini with tongue, cornichon, and creamy horseradish (22 portions);
  • Bruschetta with goat cheese and tomato salsa (11 portions);
  • Zucchini rolls with feta cheese and bell pepper (11 portions);
  • Eggplant rolls with feta cheese and walnut (11 portions);
  • Mini red velvet cake served buffet-style (22 portions);
  • Tomatoes with mozzarella cheese, pesto sauce, and balsamic cream (11 portions);
  • Lightly salted herring with boiled potatoes and green onions (11 portions);
  • Salad with veal tenderloin (11 portions);
  • Salad with chicken liver, cherry tomatoes, quail egg, and herb pesto (11 portions);
  • Classic antipasto with Parmesan, Gouda, dried fruits, and meat delicacies (3 portions);
  • Fruit assortment (20 portions);
  • Éclair with shrimp and avocado (17 portions);
  • Croissant with ham and cheese (11 portions);
  • Mini croissant with salmon (11 portions);
  • Canapé set with tartare of lightly salted salmon (10 portions);
  • Profiteroles with turkey mousse, cream cheese, and pistachios (10 portions);
  • Pancakes stuffed with chicken and mushrooms in cream sauce (10 portions).

As for drinks, guests will be offered black or green tea in bags, as well as grain coffee (espresso or Americano). Sugar, lemon, and cream will be served with them.

The service staff, including one waiter, two loaders, and a coordinator, must work up to 7 hours during each event. The contract separately stipulates the provision of all necessary buffet dishes: plates, glasses, cutlery, and other items.

Payment for catering services will be made by the Dynamo sports school from funds obtained from income-generating activities.
