Ingredients (for 12–15 pancakes):

  • milk — 500 milliliters;

  • chicken eggs — 2 pieces;

  • wheat flour — 200 grams (approximately 1.5 cups of 250 milliliters each);

  • sugar — 2 tablespoons;

  • salt — ½ teaspoon;

  • vegetable oil — 2 tablespoons (into the batter);

  • butter — for greasing the skillet (can be replaced with vegetable oil).

Step 1: Prepare Smooth Batter Without Lumps

In a deep bowl, lightly beat the eggs with sugar and salt until slightly frothy. Pour in half of the milk (250 milliliters) and mix. Sift the flour gradually, constantly stirring with a whisk. Your goal is to get a thick, homogeneous paste without a single lump. This method guarantees smoothness.

Step 2: Achieve the Consistency of Thin Sour Cream

When the paste is smooth, pour in the remaining milk in a thin stream, actively kneading the batter.   3. With quick, confident movements, start «drawing» with the batter on the skillet: spirals, grids, monograms. Don«t press too hard; the batter should flow in a thin stream.

Step 4: Fry Until Golden Crispiness

As soon as you finish the pattern and the batter has set over the entire surface (this takes 20–30 seconds), with a very thin spatula, carefully lift the edges and flip the pancake.
