Five Quotes from AVTOVAZ Canteen Chief Nina Churilina

This canteen can feed 1,200 people at a time. A few years ago, there were two halls, and in one shift we fed up to 2,500 people. Correspondents from TOLYATTY.ru met with the head of the association that oversees several canteens of the auto giant, Nina Churilina, to see how lunch is prepared for the thousands-strong army of plant workers. And they found out why porridges here are fluffier and soups heartier than at the most caring grandmother«s.
«Sometimes workers approach our staff and beg: «Just a drop of mustard!» We have to refuse. We know everyone by face, remember who is allowed what.»
«Young workers ask: «Where are our nuggets?» Or they demand: «Give us pelmeni (Russian dumplings), I don»t want this porridge of yours.« I reply: the porridge is tasty, hot, with a bit of butter!»
«Pea soup in large cauldrons always turns out more fragrant and hearty. But porridge requires a different approach: it needs to be stirred in time to achieve fluffiness and crumbliness.»
«We work exclusively in disposable gloves — we change them by the hundreds per shift. And we change clothes twice a day: during cooking, one uniform; at serving, another, branded one.»
«There were workers from India. Very colorful guys! They loved our soups, ate sour cream with spoons. But invariably they poured, probably, a whole pepper shaker into each plate at once.»
Read our report from the canteen, which we started making together with the canteen workers early in the morning to trace the process from A to Z and find out all the nuances.
