Juicy persimmon is a treasure trove of vitamins and is perfect for the cool autumn period in Yugra (Khanty-Mansi Autonomous Okrug). Why persimmon is so beneficial and how to use it to make breakfast not only tasty but also incredibly nutritious was explained by specialists from Rospotrebnadzor (the Federal Service for Surveillance on Consumer Rights Protection and Human Wellbeing) of Khanty-Mansi Autonomous Okrug.

Persimmon contains a record amount of beta-carotene, known as a powerful antioxidant that actively fights for youthful skin and sharp vision. The fruit is also rich in iodine, necessary for the normal function of the thyroid gland, as well as iron, potassium, manganese, phosphorus, magnesium, and a whole complex of B vitamins.

Ingredients

  • cottage cheese — 200 g;

  • yogurt — 120 g;

  • persimmon — 2 pieces;

  • honey — 1 tbsp;

  • mint leaves (optional).

Preparation Method

  1. First, prepare the persimmon: thoroughly wash the fruits, remove the stems and all seeds. Then cut the persimmon into small pieces.

  2. Transfer the chopped persimmon to a blender bowl and blend until smooth puree. Pour the mixture into a separate bowl.

  3. Next, in the same blender bowl, place the cottage cheese, add natural yogurt and a spoonful of honey. Whip all ingredients until fluffy and homogeneous in consistency.

  4. Then take serving cups. Layer the mixture, alternating the cottage cheese mixture with persimmon puree.

  5. Optionally, as a final touch, you can garnish the dessert with fresh mint leaves.
