Yakut Pancakes: Life Hacks from Housewives

Pancakes are the number one dish in every Yakut family. Some joke that the republic survives only thanks to their power, as they are cooked on every possible occasion: moving house, a series of misfortunes, bad dreams, illness, death and funerals, childbirth, wedding, travel, and many other situations for all life events. A 14.RU correspondent prepared the favorite flour-based treat, learned life hacks from housewives, and also explained what algystaakh alady is.
A Tasty Tradition
Yakuts call pancakes algystaakh alady (blessed pancakes — translation from Yakut). Ethnographers documented their first appearance in the second half of the 19th century. Previously, the batter was made with milk, sometimes adding cream, colostrum (the secretion of the mammary gland that forms in cows in the last 2–3 weeks before calving and the first 4–5 days after it. — Ed.) and eaten by dipping in warm melted butter.
By the way, it is very important to think positively while preparing the dish, as this is how ordinary pancakes become blessed — they absorb positivity and carry it into the world.
It is worth noting that if you are preparing pancakes before some event, you need to start in the morning; you cannot prepare them after lunch (perhaps the spirits like to sleep?). If you plan to feed the earth, river, or forest with pancakes, the first batch is usually not eaten but offered as a tribute to the spirits. When cooking for any purpose, one pancake is left for chochuokke (in Russian «domovoy»), to appease it.
In Yakut mythology, chochuokke looks like a small and mischievous child, and sometimes it can be evil. According to legends, chochuokke lives in the darkest corners of the house, and only children and pets can see it.
If you have moved to a new house, preparing pancakes is a mandatory step; their smell will attract good things. You also need to place the flour-based food on all four sides of the house, and this must be done with kind thoughts.
Memorial pancakes should not be fluffy, so no egg is added to them.
Generally, there are various stories with pancakes, for example, recently the Deputy Minister of Entrepreneurship of Yakutia Maria Karpova stated that the tradition of treating nature with pancakes is dangerous — large animals gather for them and eventually approach people. The Telegram channel «Spicy Yakutia» posted a video from the border of Yakutsk and Khangalassky District, showing how many pancakes are placed on the ground for a safe journey. Commentators called this savagery.
In April 2025, the publication Sakha Press published complaints from Muscovites who became neighbors with Yakuts.
— Someone scattered pancakes in the morning. For what purpose — it«s unclear, — such a message appeared in the house chat of one of the capital»s residential complexes.
One of the residents of the house reported that she saw elderly Yakut women doing this. In Moscow, the tradition was not understood, and they advised not to litter the streets. Well, we advise trying to cook pancakes yourself.
Recipe and Life Hacks
For preparation, we will need ingredients that can be found in any refrigerator:
one egg;
half a cup of cold water;
two cups of milk;
400–500 grams of flour (approximately 1 lb);
1.5 tablespoons of sugar;
vegetable oil.

Pour a moderate amount of vegetable oil into a frying pan and set it on low heat to warm up, then start with the batter. Note that it should turn out like thick sour cream.
In a bowl, crack one egg and whisk with a whisk until light foam appears.

Pour half a cup of water and also whisk slightly.

After that, pour in the milk and also whisk. The next step is sugar. After adding each new ingredient, be sure to whisk the batter slightly.

It«s better to add the flour in small portions, gently stirring the resulting mixture.

Pour a little batter into the frying pan, each side needs to be fried for about a minute, it«s better to do this on low heat, otherwise the pancake will blacken on the outside and remain raw inside.

Flip with a fork, fry, and voila — the first batch of golden-brown pancakes is ready! Usually, I give the first pancake to my husband to check if others can eat it. Just kidding. Of course, this is done out of respect and love as the master of the house.

Yakut pancakes themselves differ from Slavic ones in that no yeast is added for fluffiness.
However, some housewives like them fluffier, so they add not one but two eggs and half a teaspoon of baking powder to the batter. Those who prefer flatter pancakes are advised to barely whisk the batter when mixing. And if you want them crispy, you should add more sugar.
By the way, even here pancakes vary: in the Vilyuy District, they like to make them fluffier, in the Tattynsky District — flatter, and in the Olyokminsky District, it«s rare to cook pancakes according to the Yakut recipe; they usually use yeast.
