Homemaker and mushroom hunting enthusiast Tatyana Nemchinova shared a recipe for mushroom solyanka made with oyster mushrooms, along with a weekend plan. We head to the nearest forest with the family, breathe fresh air, gather mushrooms, and then at home cook the simplest but most delicious hot dish.

Everything you need to prepare mushroom solyanka: chicken broth, mushrooms, potatoes, onions, tomatoes, sausage, pickles, herbs, your favorite spices.

«When you really crave mushroom solyanka, you have to go to the forest. I found oyster mushrooms and I«m happy! Let»s go cook. I sauté the oyster mushrooms in sunflower oil for about 10 minutes, while I«m boiling the broth. Mine is with chicken breast, almost no meat. Into this broth, I add the sautéed oyster mushrooms, onions, potatoes, — says Tatyana. — At the same time, I separately sauté two small tomatoes with tomato paste and sausages, whatever sausage I have, and you can add pickles. I replaced them with mushrooms — marinated oak mushrooms. Now I throw all this into the pot with the oyster mushrooms. At the end, I add herbs. And when serving — sour cream, olives (olives), croutons. It»s very tasty with flammulina — that«s winter honey fungus, its season is coming soon».

Earlier, homemaker Yelena Kan made a salad from oyster mushrooms, adding fresh cucumber cut into matchsticks, shredded carrots, onion in half-rings, several cloves of garlic, and herbs. She says it turns out incredibly tasty, with a tangy note, and can be served with anything. Catch the cooking instructions here and repeat.
