Nikolai Zlydnev, a rural blogger from the Leninsky District of Volgograd Oblast, shares how to cook tripe to delight your family. Here are several recipes!

For the first dish, you«ll need tripe, onion, carrot, oil, salt, spices, and mustard.

«Soak the tripe in hot salted water for a couple of hours, then clean it with a knife. Rinse thoroughly with hot water until it turns white. Boil it for 2–3 hours, then cut into small pieces. Meanwhile, sauté onion and carrot, add the chopped tripe, and fry for 15–20 minutes before serving. It can be eaten without a side dish. It»s very tender and tasty on its own, especially with mustard,« says Nikolai.

The second dish is fried tripe pancakes. For the filling, the ingredients are the same, and for the batter, you«ll need eggs, milk, salt, sugar, flour, and vegetable oil.

«For the batter, you»ll need three eggs, salt to taste, two tablespoons of sugar, and 750 milliliters of milk. Add about 250 grams of flour and a tablespoon of vegetable oil, then mix until smooth. Fry the pancakes,« the author explains. »For the filling, we use tripe. After boiling and grinding it, we sauté it with onion and carrot. Stuff the pancakes, and for extra flavor, pan-fry them on both sides until golden brown.«
