«We»re making insanely delicious jellied meat from beef and pork trotters and shanks; ears will work too, by the way. First, soak all this in water for about two hours, then put it on the heat, and after boiling, cook for five minutes. Now drain this water and add fresh water so the broth is clearer. Add an onion, carrot, bay leaf, peppercorns, and don«t forget to salt. Let it cook — for at least 5–6 hours,» explains Nikolai. «When everything is cooked, start separating the meat and shred it into small fibers. Place the meat, sprinkle chopped or crushed garlic on top. Then pour our broth over it. Overnight, take it outside or put it in the refrigerator. With mustard — it»s simply divine! Enjoy your meal!«
