We«ve gathered hearty recipes using just three simple ingredients—easy to recreate in your own kitchen without any fuss.

Baked eggplant with minced meat and cheese

Eggplant boats with juicy minced meat can be ready in under an hour. To save time, you can fry the meat before stuffing the eggplants. Then the second baking stage only needs 5 minutes to melt the cheese.

Ingredients:

2 eggplants

  • 400 g (14 oz) ground beef

  • 150 g (5 oz) mozzarella for pizza

  • Olive oil for frying

  • Fresh herbs

  • Salt and black pepper, to taste

    Instructions:

    Cut the eggplants in half and place them on a baking sheet lined with parchment paper.

  • Score each half diagonally, salt to taste, and brush lightly with olive oil. Bake for 20 minutes in an oven preheated to 180°C (350°F).

  • In a bowl, combine the ground beef with herbs. Season with salt and pepper.

  • Remove the baked eggplants from the oven. Carefully scoop out the flesh with a spoon and mix it into the meat. For extra juiciness, you can add finely chopped tomato.

  • Fill the eggplant skins with the stuffing.

  • Top with mozzarella slices and bake for 20 minutes in an oven preheated to 200°C (400°F).

    Baked chicken breast with tomatoes and olives

    This dish is built on a simple yet successful marriage of flavors: white poultry meat pairs beautifully with Mediterranean accents like tomatoes, olives, and fragrant herbs. It works for both everyday dinners and small festive gatherings.

    Ingredients:

    800–900 g (1.8–2 lb) chicken breast fillet

  • 1 ripe tomato

  • 50 g (1.8 oz) pitted olives

  • 1 red onion

  • 1 tsp lemon juice

  • 2 tbsp olive oil

  • Salt, to taste

    Instructions:

    Slice the tomato into rounds and halve the olives.

  • Cut the onion into rings. Add the lemon juice and olive oil. Massage with your hands and let sit for 15 minutes.

  • Slice the chicken breast fillet lengthwise, almost to the edge. Place tomato slices, onion, and a few olive halves inside. Drizzle with the remaining lemon-oil mixture and season with salt. Fold the fillet to form chicken pockets stuffed with vegetables.

  • Place the fillets on a baking sheet lined with parchment paper. Bake in an oven preheated to 180°C (350°F) for 25–30 minutes.

    Potato boats

    This hearty and appetizing dish gives familiar potatoes a fresh twist. Crispy bacon bits add flavor punch—their smoky, savory taste contrasts nicely with the mildness of the potatoes.

    Ingredients:

    4–5 potatoes

  • 250 g (9 oz) cheese

  • 250 g (9 oz) bacon

    Instructions:

    Wash the potatoes and bake them in the oven until soft.

  • Fry the bacon in a skillet until crispy.

  • Let the potatoes cool, then cut them in half.

  • Use a spoon to scoop out some potato from each half to form boats.

  • Mix the scooped-out flesh with the cheese and bacon.

  • Spoon the mixture back into the boats and bake for 10 minutes at 180°C (350°F).

    Meatballs in tomato sauce with mozzarella

    This is a hearty and quick recipe for a tasty dinner. The most unusual ingredient is the mozzarella cheese hidden inside each meatball. Serve with pasta or long-grain rice as a side.

    Ingredients:

    500 g (1.1 lb) minced meat (homemade preferred)

  • 500 g (17.6 oz) strained tomatoes

  • 250 g (9 oz) mozzarella cheese

  • Salt, pepper, and spices, to taste

    Instructions:

    Season the minced meat with salt and pepper, and mix well.

  • Form a small patty from the meat and place a mozzarella pearl in the center. Fold the edges and roll into a meatball.

  • Heat oil in a heavy-bottomed skillet and sear the meatballs for a few minutes until golden.

  • Transfer the meatballs to a baking sheet and bake in an oven preheated to 180°C (350°F) for 30 minutes.

  • While the meatballs bake, make the sauce. Add spices and salt to the strained tomatoes. Bring to a boil and simmer uncovered for 10 minutes.

  • Serve the meatballs over the tomato sauce.

    Button mushrooms stuffed with minced meat

    This recipe can be a pleasant addition to dinner or a satisfying standalone dish. Baked potatoes are the best side dish for stuffed mushrooms.

    Ingredients:

    400 g (14 oz) minced meat

  • 10 button mushrooms

  • 250 g (9 oz) mozzarella for pizza

  • 1/2 onion

  • Salt and pepper, to taste

    Instructions:

    For the filling, chop one large onion.

  • Grate the cheese and mix it with the minced meat in a bowl. Add pepper and spices to taste.

  • Remove the stems from the mushrooms. Place the caps on a skillet, salt them, and stuff with the filling.

  • Transfer the stuffed mushrooms to a baking sheet and bake in an oven preheated to 180°C (350°F) for 40 minutes. Five minutes before done, top with the remaining cheese.
