Spicy Tomato Gorloder Recipe from Arkhangelsk

The spicy sauce is easy to make
In the Arkhangelsk Region (Arkhangelskaya oblast), tomatoes are being harvested and preserved in full swing. It is the perfect time to add some flavorful homemade gorloder to your canning lineup. A northern woman, Yelena Agafonova, has shared her recipe for the spicy tomato sauce.

“Gorloder, khrenoder, khrenovina — this unassuming tomato sauce goes by so many names. In Siberia, where I am from, it was called gorloder, and it never included horseradish — only tomatoes, always red ones, plenty of garlic, and salt,” Yelena says.
Wash the tomatoes (3 kg / 6.6 lb) and cut them into large pieces.
Put them in a blender jar: tomatoes, garlic (200 g / 7 oz), salt (3 tbsp), sugar (1 tbsp).
Blend. Do not boil it!
Taste it. If there is not enough garlic, add more.
Yelena Agafonova lives in a country house, restoring it with her own hands and running a beautiful blog. Over the course of a year, she has turned an ordinary dacha (summer cottage) into a remote worker«s paradise — with a cozy stove and a handmade kitchen. We will soon tell the story of how this northern woman managed to build a life outside the city.
