Soft, Fluffy Cinnamon Buns: Classic Recipe with Cream Cheese Frosting

Cinnabon buns are perhaps one of the most popular treats known in many countries. They gained such popularity not only due to their delicious taste but also because of their fairly simple preparation. A resident of Barnaul shared the classic recipe with NGS22.
Ingredients:
For the dough:
Wheat flour — 600 g
Milk — 250 ml
Eggs — 2 pcs.
Sugar — 80 g
Butter — 70 g
Dry yeast — 7 g
Salt — 0.5 tsp.
For the filling:
Butter — 60 g
Sugar — 130 g
Ground cinnamon — 2 tsp.
For the cream:
Cream cheese — 180 g
Powdered sugar — 50 g
Milk — 50 ml
Before cooking, all ingredients should be taken out of the refrigerator — this will make the dough fluffier. Butter needs to be melted in any convenient way. Heat the milk to 37–38°C (98.6–100.4°F). After that, add a teaspoon of sugar and the yeast to it. Then mix and let it sit for 10 minutes.
Wash the eggs and crack them into a bowl. Then add sugar there and whisk the mixture with a whisk. Then, to the same bowl, add the milk with yeast and the melted butter. Mix everything again with a whisk.
Next, sift the flour into a separate bowl. After that, gradually mix it into the liquid ingredients, stirring constantly. Along with one portion, also add the salt. When the flour is finished, start kneading the dough. Knead it for a long time, about 10 minutes. Add more flour if necessary.
After that, gather the dough into a ball, place it in a bowl, cover with a towel, and put it in a warm place for 1 hour. During this time, it will grow two to three times in size.
While the dough is rising, prepare the filling. Mix sugar with cinnamon. By the way, instead of white sugar, you can use brown sugar — then the filling will acquire a caramel flavor.
After an hour, roll out the dough into a rectangle 5mm thick, spread it with butter, and sprinkle cinnamon and sugar on top. After that, roll it up into a log and cut into pieces of equal width.
Line a baking pan with parchment paper. There is no need to grease it. Place the buns at a distance, as they will expand significantly during baking. After that, cover them with a napkin and leave them on the table for another 30 minutes.
At this time, preheat the oven to 180°C (356°F). Bake the buns for 25–30 minutes, until golden brown. Time and temperature may vary depending on the appliance.
While the buns are baking, prepare the cream from cream cheese, powdered sugar, and milk. The cream should be homogeneous and of medium thickness. Spread it on the slightly cooled buns.
