Refreshing Okroshka with Ayran Recipe from Barnaul

In summer, okroshka becomes one of the most popular dishes. Every housewife has her own tried-and-true recipe, and NGS22.RU reader Elena prefers to make it not with kvass or kefir, but with ayran. Here’s how to make okroshka with ayran.
For preparation you will need:
- 4–5 medium potatoes;
- 4 eggs;
- 2–3 fresh cucumbers;
- 3 radishes;
- 300–400 grams (11–14 oz) of boiled sausage or cooked chicken breast;
- a bunch each of green onions and dill;
- parsley to taste;
- 1–1.5 liters of ayran;
- 300–500 milliliters of cold sparkling mineral water (optional);
- 1 teaspoon of mustard;
- salt and black pepper to taste.
First, boil the potatoes and eggs, cool them, and cut into small cubes along with the cucumbers, radishes, sausage or chicken. Then finely chop the herbs, mix all ingredients in a large pot, add mustard, salt, and pepper.
Then pour the ayran over the okroshka. If it seems too thick, you can dilute it with cold sparkling mineral water to the desired consistency.
“The main thing is not to skimp on the greens. Then the okroshka turns out aromatic, light, and truly summery,” advises the reader.
Before serving, Elena recommends chilling the dish in the refrigerator for about half an hour to fully enjoy its freshness.
