Residents of Yugra (Khanty-Mansi Autonomous Okrug) have started digging up potatoes. Ordinary ones no longer surprise anyone. Ever tried a black one? That’s what it looks like at first glance, but in fact — dark purple. A Nizhnevartovsk resident has grown this unusual variety. We looked at this garden marvel in cross-section and found out whether it has a distinctive taste.

«The potato is very tasty and contains many antioxidants. It was grown at a dacha (country cottage) using an organic farming system», the Nizhnevartovsk resident said.

According to him, this variety is purple on the outside and slightly so inside. There are other types as well: some are completely purple on the cut surface.

A sliced tuber reveals purple patterns that fade to gray or brown when cooked.

The potato is cooked like any other. With heat it turns more gray or brown. Thanks to its color, it is excellent for vinegret (beet salad) or borscht (beet soup); in that case, it is better to roast it.

Earlier we wrote that Natalia Gorelik from Yugorsk has been growing giant vegetables for several years. This year the “stars” of her garden were a 100-kilogram (220 lb) pumpkin, a three-meter (9 ft 10 in) sunflower, and a 60-centimeter (24 in) cucumber.
