Thin pancakes are a symbol of home comfort and fragrant mornings. They are served with jam, condensed milk, honey, or simply with butter. If you«re looking for a recipe for thin milk pancakes that won»t fail, this one will definitely become your favorite.

Ingredients (for 12–14 pancakes):

  • milk — 500 ml;

  • eggs — 2 pieces;

  • flour — 200 g (about 1 heaped cup);

  • sugar — 1–2 tablespoons (to taste);

  • salt — a pinch;

  • vegetable oil — 2 tablespoons (and a little for greasing the pan);

  • optional: vanilla sugar or a little melted butter for flavor.

Step-by-step recipe:

  1. In a deep bowl, whisk the eggs with sugar and salt until light foam forms.

  2. Add half of the milk and gradually sift in the flour. Mix with a whisk until smooth — without lumps.

  3. Pour in the remaining milk and vegetable oil. The batter should be thin, like kefir or cream. If it seems thick, add a little more milk.

  4. Heat a non-stick pan or crepe pan well. For the first time, lightly grease the surface with oil using a brush or half a potato on a fork.

  5. Pour a little batter, spread it evenly over the pan. Fry over medium heat for 1–2 minutes until golden edges appear, then carefully flip and brown the other side.

  6. Stack the finished pancakes and cover with a towel — this way they will stay soft. Serve with your favorite toppings: honey, sour cream, berries, chocolate, or caviar.
