«There«s a sea of blueberries — ripe, large and very sweet. They ripened much earlier than last year. They spread in a carpet, they even crunch underfoot,» the northerner said.

Svetlana«s husband uses a special berry rake for picking. According to her, with its help a 12-liter bucket can be filled in about 20 minutes.

Besides blueberries, the family also came across cloudberries in the forest. But there are practically no mushrooms yet. Svetlana advises fans of quiet hunting to wait before gathering them.

What northerners do with blueberries

Svetlana«s family eats some of the berries fresh, while most are frozen for the winter. Blueberries are also used for baking and homemade desserts.

One of their favorite options is pancakes with sour cream and fresh berries. The family also makes kalitki (Karelian rye pastries) with blueberries, sochni (flat pastries) and a shortcrust sour-cream pie.

Svetlana herself likes to make a dessert from blueberries, Greek yogurt and chia seeds. She also makes berry mors (fruit drink) from the harvest.

A few years ago, the northerner came up with her own jam recipe — made from blueberries, orange and vanilla. According to her, she doesn«t boil the jam for long, and adds pectin for thickness. The children especially liked the dessert.

Homemade wine from blueberries

Another way the family processes the berries is homemade blueberry wine. According to Svetlana, her husband especially likes this drink.

For the wine, she uses blueberries and raisins, adding a small amount of sugar. The result is a dry drink with a strength of about 12 degrees.

«The result is a divine drink — 12 degrees and 0 sugar. An excellent dry wine, aromatic,» Svetlana said.
