Murmansk-Style Caesar Salad Recipe to Try

This recipe offers a flavorful twist on the classic Caesar salad by using baked cod and a briny dressing.
Murmansk is a fish city, and this product is used in various recipes here. The «Murmansk-style Caesar» retains the structure of the famous salad, but instead of chicken, baked cod is used, and the usual sauce gains a piquant sea note, making it very tasty.
Ingredients:
cod fillet — 200 g (approx. 0.4 lb);
romaine or iceberg lettuce — 1 head;
white bread (for croutons) — 2 slices;
Parmesan — 40 g (approx. 1.4 oz);
chicken egg — 1 piece;
garlic — 1 clove;
olive oil — 3 tbsp;
lemon juice — 1 tsp;
Dijon mustard — ½ tsp;
anchovy (optional) — 1 fillet;
salt, pepper — to taste.
Preparation:
Preheat the oven to 180 °C (356 °F). Brush the cod fillet with olive oil, salt, pepper, and bake for 10–12 minutes until tender. Cool and break into large pieces.
Cut the bread into cubes, drizzle with oil, add a pinch of salt, and dry in a pan or in the oven until golden brown.
In a blender, combine the egg (hard-boiled, yolk only), garlic, mustard, lemon juice, anchovy (if using), and gradually add olive oil. Blend until thick like homemade mayonnaise.
On the bottom of a plate, place torn lettuce leaves, top with cod, croutons, and grated Parmesan. Drizzle with sauce and gently mix.
Garnish with a pinch of freshly ground pepper and a lemon wedge. The salad is good as a standalone dish, especially with a glass of chilled white wine.
