How to Make Rice Porridge with Milk and Nuts: A Simple Recipe

Many home cooks have unjustly forgotten about rice porridge with milk, but this dish can be a real discovery. Hearty, aromatic, and incredibly tasty, it is in no way inferior to the usual buckwheat or oatmeal. The step-by-step recipe was shared by Barnaul resident Anna Patylitsina.
What you will need:
Purified water: 3 cups
Village full-fat milk: 3 cups
Round-grain rice: 1 full cup (for example, «Krasnodar»)
Salt, granulated sugar, ground cinnamon, vanilla: to taste
Seedless black raisins: ½ cup
Shelled walnuts: ½ cup
Butter: 65 g
Let«s start cooking:
Preparing the rice: First of all, carefully sort the round-grain rice to remove any impurities. Then rinse it under cold running water in a sieve until the water runs clear. This will help get rid of excess starch and make the porridge more crumbly.
Preparing additional ingredients: To make the porridge truly special, don«t forget the raisins and walnuts. Clean them from debris, rinse, and pour boiling water over them for 30-40 minutes. After that, rinse again and squeeze out as much excess liquid as possible.
Cooking the porridge: Pour milk and water into a thick-bottomed pan. Bring them to a boil over very low heat. As soon as the liquid boils, add the prepared rice and immediately stir well so that it doesn«t stick to the bottom.
Cook the rice without a lid over low heat, adding salt and sugar to your taste. Remember to stir the porridge every 2-5 minutes so it doesn«t burn. Doneness is determined by the softness of the rice and the overall viscosity of the dish.
If you prefer a more liquid porridge, add 1 more cup of milk. For a thick porridge, on the contrary, reduce the amount of liquid.
The finishing touch: When the porridge reaches the desired consistency, add the prepared raisins, walnuts, ground cinnamon, vanilla, and butter. Thoroughly mix all the ingredients, cover the pan with a lid, and wrap it in a thick blanket.
Let the porridge «rest» in this position for 45 minutes. During this time, it will cool slightly, absorb all the aromas of the spices and other additives, and reach the perfect viscosity.
