How to Make Classic Mixed Meat Soup with Sausage

Classic solyanka is a hearty and rich dish that is perfect for both festive dinners and everyday lunches. There are many recipes for it, and one of them was shared with NGS22.RU by a resident of Barnaul.

Ingredients:

  • Beef on the bone — 800 g;

  • Smoked sausage — 150 g;

  • Sausages — 2–3 pieces;

  • Pickled cucumbers — 150 g;

  • Onions — 2 pieces;

  • Pitted olives — 100 g;

  • Tomato paste — 1 tablespoon;

  • Vegetable oil — 4 tablespoons;

  • Bay leaf — 1 piece;

  • Salt — to taste;

  • Water — 3 liters.

For serving:

  • Lemon — several slices;

  • Sour cream — to taste;

  • Fresh herbs — to taste.

Place the beef in a pot, cover it with cold water, and bring to a boil. Skim off the foam and reduce the heat to low.

Add a peeled onion and simmer the broth on low heat for 2–2.5 hours (until the meat is cooked). After that, add the bay leaf to the pot and continue cooking the broth for about 20 more minutes.

Remove the cooked meat from the broth and let it cool. Discard the onion and bay leaf — they are no longer needed.

Strain the broth and bring it to a boil again. After the long cooking time, about 1.5 liters of broth will remain.

Peel and finely chop the onions. Heat vegetable oil in a pan, and sauté the onions over low heat for a couple of minutes.

While the onions are sautéing, grate the pickled cucumbers on a coarse grater. Add them to the onions and cover the pan. The cucumbers need to steam in the pan for 5 minutes.

Add tomato paste to the mixture and sauté for another 3–4 minutes. Then transfer the sautéed mixture to the broth and cook everything for 10 minutes.

Meanwhile, peel the casing off the sausage and sausages and slice them. Separate the boiled meat from the bones and also chop it. Then add everything to the pot and cook for another 5 minutes.

Add the olives to the solyanka. Then salt the broth and cook for another 5 minutes.

Before serving, let the soup rest for a bit. It is recommended to serve the mixed meat soup with sausage with a slice of lemon, olives, and sour cream. Additionally, you can add finely chopped herbs.
