Hearts in Creamy Mushroom Sauce
For this recipe, you will need about 900 grams (approximately 2 pounds) of chicken hearts, 300 grams (about 10.5 ounces) of fresh button mushrooms, 200 milliliters of cream (10% fat) or sour cream, two onions, salt, pepper, and vegetable oil.
First, the hearts need to be thoroughly washed and cleaned. Then, heat oil in a pan and fry them for about 15 minutes. While the hearts are cooking, prepare the vegetables: peel and finely chop the onions and mushrooms. Add them to the hearts, salt, pepper, and fry for another couple of minutes. After that, pour in the cream or sour cream and simmer for about 20 minutes. At the very end, add a bay leaf and let the dish sit for another 5 minutes. Serve, garnished with fresh herbs, with your favorite side dish — porridge or mashed potatoes.
Hearts in Tomato-Sour Cream Sauce
This version is suitable even for children«s meals thanks to its delicate taste. You will need 500 grams (about 1.1 pounds) of hearts, one onion, three tablespoons of sour cream, one tablespoon of tomato paste, 200 milliliters of boiled water, one tablespoon of flour, salt, and pepper.
Wash the hearts, pat dry, and remove excess fat and vessels. Make a crosswise cut on the pointed side so that they open up like «little flowers.» Finely chop the onion and fry until translucent. Add the hearts to it and simmer for about 15 minutes without adding liquid. For the sauce, mix sour cream, tomato paste, and flour with water until smooth, avoiding lumps. Pour the sauce into the pan with the hearts, stir, and simmer for another approximately 15 minutes. Serve with any side dish to your taste.
Hearts with Vegetables in Sour Cream Sauce
For this recipe, take half a kilogram (about 1.1 pounds) of hearts, one liter of water, one onion, half a large carrot, two tablespoons of sour cream, salt, pepper, favorite spices, lemon, and fresh herbs.
First, boil the cleaned and washed hearts in salted water for about 15 minutes. While they are boiling, peel and chop the onion, grate the carrot. In an enameled pot or bowl, grease the bottom with oil, place the boiled hearts, add half a cup of the broth in which they were boiled, and the prepared vegetables. Put it on the stove. Once it boils, add the sour cream, reduce the heat, and simmer for about 20 minutes. 5 minutes before done, you can add spices and pepper. Before serving, garnish the dish with fresh herbs and thin slices of lemon.
