First cutlet cafe opens in Yekaterinburg

The menu features more than 20 types of cutlets made from meat, chicken, and fish. Guests can pair them with one of four side dishes and add a salad. Depending on the choice, a meal will cost between 300 and 600 rubles ($3–$6).

The space seats about ten people: three tables and a bar counter overlooking Malysheva Street. The interior is styled after Soviet-era buffets to evoke childhood memories and home-style cooking.
On the first day, chef Nikolai Ishutin served guests. He previously worked at Pine Creek, Hyatt Place, and the Domina Novosibirsk hotel. Originally from Siberia, Ishutin studied Russia«s regional cuisines before opening the cafe to compile traditional cutlet recipes from across the country.
«This is our first project in Yekaterinburg. We plan to open a chain of cutlet cafes here in the future. Today we also thought about making a recipe book — guests come in and share their family secrets, and we want to collect them,» said Nikolai Ishutin.
The cafe is registered as an individual entrepreneur under Gayane Arutyunovna Aslikyan, who registered in March 2026. The owner of several large Georgian restaurants in Yekaterinburg assisted with the opening.
This format is currently unique in the city. Cutlet cafes have operated in Moscow and St. Petersburg for some time, but the Ural market differs in guest purchasing power and audience size. Marketer Ulyana Sergeyeva noted: «The format itself seems very interesting and memorable, but the mono-product story is complex. Right now, restaurants are expanding their menus instead — adding pizza and rolls — dishes for every taste. Whether guests will want to regularly return here for cutlets remains a question.»
