Lazy dumplings — a quick take on the classic Russian dish vareniki — are the perfect option for anyone who wants to make something homely and delicious without spending half a day in the kitchen. The dish not only saves the day when you need to feed the family fast, but also has nutritional value thanks to its cottage-cheese base. Nadezhda Shulgina from Barnaul (Siberia, Russia) shared her recipe — and believe me, the result is worth it: these dumplings turn out far tastier than store-bought ones.

Ingredients:

You will need the most ordinary ingredients, which are probably already in your fridge:

Cottage cheese (tvorog) — 400 g (14 oz);

  • Flour — 300 g (2½ cups);

  • Eggs — 2;

  • Sugar — 100 g (½ cup);

  • A pinch of salt.

    How to make them:

    Prepare the base. First, make the cottage cheese as smooth as possible. Press it through a sieve or mash it thoroughly with a fork so no large lumps remain. Add the eggs and sugar and mix well until smooth.

  • Make the dough. Add the salt and sifted flour. Knead the dough by hand: it should stay soft and slightly sticky to the fingers — that«s normal. Shape it into a ball, wrap it in plastic wrap and refrigerate for 30 minutes. The rest makes the dough more obedient.

  • Shaping. Take the chilled dough and divide it into parts. From each one, roll a long rope and cut it into small pieces/flat rounds.

  • Boiling. Drop the pieces into boiling salted water. As soon as they float to the surface and the water comes back to a boil, set the timer for 5 minutes — that«s enough time for them to be done.

    The classic flavor of the dumplings is delicate and moderately sweet. If you want them neutral, just omit the sugar. You can serve the dish in various ways: with sour cream, onions fried until golden, or even with fragrant unrefined sunflower oil.
