August is the perfect time to gather wild berries and treat your loved ones to homemade baked goods. We share a simple recipe for a pie made from ready-made dough, where the filling is guaranteed to stay inside.

Ingredients:

puff pastry (yeast-free) — 1 sheet (250 g);

  • fresh blueberries — 300 g;

  • sugar — 80 g (about ⅓ cup);

  • cornstarch — 1.5 tbsp;

  • breadcrumbs or ground cookies — 2 tbsp;

  • butter — 20 g;

  • egg — 1 (for brushing).

    Step-by-step recipe:

    Prepare the base. Thaw the pastry sheet at room temperature and roll it out lightly on a sheet of parchment. Brush the surface with melted butter, leaving the edges clean (about 2 cm). Sprinkle the butter with breadcrumbs or crushed cookies — this thin layer will absorb excess berry juice during baking.

  • The secret of the filling. Sort the blueberries; they should be dry. In a deep bowl, gently mix the berries with sugar and cornstarch. It is the starch that will turn the released juice into a thick, tender jam and keep it inside.

  • Assembling the roll. Spread the blueberry filling in an even layer over the breadcrumbs.

  • Shaping. Lifting the edge of the parchment, carefully roll the dough into a tight roll. Pinch the side edges and the bottom seam very thoroughly so the juice does not leak onto the baking sheet.

  • Preparing to bake. Turn the roll seam-side down. Make several diagonal cuts on the surface for steam to escape and brush with beaten egg — this will give the pie an appetizing glaze.

  • Baking. Place the strudel in an oven preheated to 200 °C (392 °F) for 25–30 minutes. The dough should brown well.
