Blogger from Irkutsk shares recipe for unusual Caesar salad with omul

Yana Otkidach, a culinary blogger from Irkutsk, has shared her recipe for a Caesar salad featuring Baikal omul, which she says can be made in just 20 minutes.

Culinary blogger from Irkutsk Yana Otkidach shared a recipe for an unusual Caesar salad: instead of the usual chicken or salmon, it requires adding Baikal omul (a fish from Lake Baikal). She published the list of ingredients and preparation method in her Telegram channel «Otkidachef | Culinary Blog | Irkutsk».

Right at the beginning of the post, Yana noted that this Caesar salad «deprived her of sleep», although she is indifferent to the regular Caesar.

«I remembered that I am a fisherman»s wife and omul is like a pet in our home. All the other ingredients miraculously appeared in the refrigerator! It was fate,« writes Yana.

The recipe includes anchovies, mustard, and other ingredients for a quick sauce.

It took the girl only 20 minutes to prepare, after which she «chewed the salad and moaned with pleasure».

«It»s all about the sauce. It turned out to be quick, easy, and very tasty. Not counting the number of ingredients, of course, but everything is really buyable,« assures Yana.

To prepare the Caesar, one needs to soak the lettuce leaves in ice water for 15–20 minutes so that they crunch. Then, dry the greens and tear them into arbitrary pieces. Simultaneously, boil quail eggs.

While all this is happening, one needs to separate the lightly salted omul from the bones and cut it into large pieces.

But with the sauce, it«s a bit more complicated. Into a glass, put 4 anchovies, 1 teaspoon of Dijon mustard, and a crushed garlic clove. Also, 1 teaspoon of Worcestershire sauce. It can be replaced with Tabasco, or one can add nothing. Also, add 1 chicken egg yolk, 1 tablespoon of capers, 1 tablespoon of lemon juice. One can also add a bit of grated Parmesan.

»Whiz-whiz with an immersion blender. Combine everything and now pour in olive oil in a thin stream—about 100 milliliters. The sauce will mix and thicken. Done,« says Yana.

After that—assembly of the salad. First, the leaves, which need to be dressed with sauce, then—the fish, cherry tomatoes, croutons, grated hard cheese, and quail eggs.

»I also added red caviar, just because I could afford it at that moment. Well, that«s it, we eat, moan, and calmly go to sleep, if you, like me, decided to make the salad under the cover of night,» jokes Yana Otkidach.
