Cheese pancakes are a dish that many love, but not everyone knows how diverse the methods of preparation can be. Barnaul resident Marina Nartova shared with NGS22.RU several simple and quick recipes that will allow you to easily make delicious cheese pancakes.

Classic version: sweet cheese pancakes

For preparation you will need:

  • Cottage cheese (fatty, large-curd) — about 450 g (1 lb)

  • Wheat flour — approximately ½ cup

  • Chicken eggs (large) — 2 pcs.

  • Baking powder — 1 pinch

  • Sugar — 1 tablespoon (or to taste)

  • Vegetable oil — for frying

  • Vanilla sugar — 1 dessert spoon

Preparing the base:

  • Mash the cottage cheese thoroughly with a spoon.

  • Add sugar, baking powder, and mix well.

  • Pour in the previously beaten eggs and vanilla sugar. Mix again until a viscous mass is obtained.

  • Gradually add flour, continuing to mix, until the dough thickens.

Frying:

  • Heat a skillet with a thick bottom on high heat, adding vegetable oil.

  • When the oil is hot, place the cheese pancakes with a spoon. About five pieces will fit on a standard skillet at a time.

  • Fry the cheese pancakes until golden brown on one side, then flip and cook for a few more minutes.

Serve the ready cheese pancakes warm, drizzled with maple syrup, jam, or condensed milk. They are also delicious cold, especially with sweet hot tea.

Alternative: cheese pancakes with herbs (unsweetened)

If you prefer less sweet dishes or want to reduce sugar intake, try making cheese pancakes with herbs.

What you will need:

  • Cottage cheese (dry, large-curd) — 200 g (7 oz)

  • Wheat flour (sifted) — 2 tablespoons

  • Chicken eggs (large) — 1-2 pcs. (optional)

  • Fresh herbs — 1 large bunch

  • Potato starch — 2 tablespoons

  • Butter — about 90 g (3 oz)

  • Salt, pepper (ground) — to taste

  • Baking soda (slaked) — 1/3 dessert spoon

Preparing the dough:

  • Mash the cottage cheese with a spoon, add salt and pepper.

  • Add finely chopped fresh herbs.

  • Beat in the eggs and add slaked baking soda. Mix until a viscous mass is obtained.

  • Gradually incorporate potato starch, then wheat flour. Mix thoroughly.

Then, cheese pancakes from this dough are fried similarly to the sweet version.
