Do you want to cook something tasty, hearty, and very simple? Then pay attention to these wonderful chicken breast pancakes. They are perfect for a light breakfast or as a main dish for lunch, for example, with tender mashed potatoes. The secret of this dish was shared with NGS22.RU by Barnaul resident Marina Nartova.

What we need:

  • Chicken breasts (frozen or chilled) — 500 g (about 1.1 lb)

  • Onion (small) — 2 pcs.

  • Chicken eggs (large) — 2 pcs.

  • Thick kefir — ½ cup (faceted)

  • Wheat flour (sifted) — to taste, until desired consistency

  • Fresh herbs (dill, parsley, etc.) — optional

  • Baking soda — a pinch

  • Salt, allspice, and favorite spices — to taste

  • Sunflower oil (odorless) — for frying

Preparing the base:

Start by preparing the chicken fillet. Rinse the breasts, remove bones, cartilage, and skin. Then finely chop the meat with a knife or grind in a blender/meat grinder. Peel the onion and finely chop it. Also finely chop the fresh herbs.

Now let«s mix all the ingredients. Add onion, herbs, salt, pepper, spices, and baking soda to the chopped chicken fillet. Beat in the eggs, pour in the kefir, and gradually add the sifted flour. It»s important to achieve a consistency of a thick, viscous mass, without lumps. To make the dough even more tender, leave it covered for 15 minutes.

Fry until golden brown:

Heat a frying pan with sunflower oil over high heat. Once the oil is hot, reduce the heat to low. Carefully spoon the dough, forming pancakes. You can fry 5-6 pieces at a time. Fry them for about 13 minutes on each side until fully cooked and with an appetizing golden brown crust. This ensures that the chicken meat inside becomes soft and very tasty.

A little secret from the hostess:

For an even more exquisite taste, you can prepare a creamy sauce. Simply mix cream and sour cream, add fresh herbs and aromatic spices. Such a sauce will perfectly complement the tender chicken pancakes.
