Bake a lingonberry pie from Yugra

Lingonberries are already ripe: the bright‑red berries are a trove of vitamins and nutrients that help strengthen immunity and support the cardiovascular and nervous systems. A warm yeast lingonberry pie suits home tea time and cozy get‑togethers in Yugra’s cool autumn. We offer a simple recipe from a resident of the Khanty‑Mansi Autonomous Okrug — Yugra (KhMAO).
Irina Kuznetsova — a resident of Surgut — often makes this pie. In her words, she values it for its simplicity and rich flavor.
To begin, prepare the ingredients for the base.
Ingredients:
milk — 200 ml;
sugar — 2 tablespoons;
salt — half a teaspoon;
yeast — 6 grams;
eggs — 3;
flour — 700 grams.
First, warm the milk over low heat and add the salt and sugar. Then, into the warm milk removed from the heat, add the yeast and eggs. Whisk the mixture.
Next, add the flour to the same bowl and mix well until elastic. Cover the container and leave it in a warm place to rise. Meanwhile, you can prepare the filling.
Ingredients for the filling:
lingonberries — 500 grams;
sugar — 150–200 grams;
starch, or baking powder — 1 teaspoon.
Mix the sugar and starch or baking powder with the lingonberries.
Take a baking sheet and grease it with oil. Spread the risen dough in a thin layer on the sheet, then pour the lingonberry filling over it. Before placing it in a preheated oven at 170–180°C (338–356°F), depending on power, wait 5–10 minutes so it rises. Bake the pie for 10–15 minutes.
To make the lingonberry pie even tastier, you can optionally add an extra — a sour‑cream topping.
Ingredients:
sour cream — 20% fat;
sugar — 2 tablespoons.
Thoroughly whip the sour cream and sugar.
Remove the pie from the oven and pour the sour‑cream topping over it. Return everything to the oven for 10 minutes until done.
All done! For extra beauty and sweetness, you can dust the top with powdered sugar.
A few tips
If the berries are very tart, add about 200 grams of sugar to the filling.
Starch holds the juice better; baking powder makes the texture lighter.
Adjust for your oven’s power — the time may vary slightly.
