  • a container of soft low-fat cottage cheese — 120 g;

  • egg — 1 piece;

  • rice flour — 40 g;

  • baking powder — 1 g;

  • salt, sugar substitute — to taste.

Instructions:

  1. Mix all the ingredients.

  2. Bake the fritters on a hot pan. Be sure to add your favorite topping and enjoy. It«s also great to add a banana there, pre-mashed with a fork.

Chebureki with chicken

Fresh, piping-hot chebureki will likely appeal to many. Plus, they are healthy and won«t harm your figure. The filling of these healthy chebureki includes chicken breast and even potatoes.

Ingredients:

  • chicken breast — 300 g;

  • potato — 210–220 g;

  • egg white — 1 piece;

  • egg yolk — 1 piece;

  • onion — half;

  • herbs — to taste;

  • salt, pepper — to taste;

  • rice paper — 3–4 sheets.

Instructions:

  1. Peel and boil the potatoes, then press them through a sieve and leave in any container.

  2. In a blender, chop half an onion, add the chicken breast, egg white, herbs, salt, and pepper, and blend again.

  3. Add the resulting mince to the potatoes and mix.

  4. Soak a sheet of rice paper in cold water for 15–20 seconds, place the potato-chicken mixture on the sheet and spread it out, cover one edge with the other, forming a cheburek or a snail shape.

  5. Place the resulting chebureki on a baking tray lined with parchment paper. I lightly grease them with coconut oil. Brush the chebureki with yolk on top and place them in a preheated pan at 180°C (356°F) for 15–20 minutes. Fry until golden. Remove, let cool, and enjoy.

Waffles with berries and nuts

If you have a waffle iron lying around at home for a long time, it«s time to take it out and use it. Ksenia shared a recipe for tasty and beautiful waffles. For the filling, the fitness trainer suggests using berries, nuts, or soft cottage cheese.

Ingredients:

  • rice flour — 60 g;

  • Greek yogurt — 200 g;

  • egg — 1 piece;

  • baking powder, salt, sugar substitute, vanilla — to taste.

Instructions:

  1. Mix all ingredients and pour into the waffle iron.

  2. The filling can be anything; I made: hazelnut paste + banana, raspberry + soft cottage cheese, cherry jam + soft cottage cheese.

Roll with berries and fruit

A healthy roll with fruit and berries looks very appetizing, and the taste is out of this world. It«s better to try it once, and you»ll understand.

Ingredients:

for the roll:

  • egg whites — 4 pieces;

  • corn starch — 22 g;

  • salt, sugar substitute — to taste.

for the cream:

  • soft cottage cheese (can be replaced with Greek yogurt) — 100 g;

  • ricotta (can be replaced with cream cheese) — 40 g;

  • berries — any (I used blackberries);

  • fruit — any (I used banana or mandarin).

Instructions:

  1. Beat the egg whites with salt and sugar substitute with a mixer, add corn starch during the process and continue beating.

  2. Spread the resulting mixture evenly on a baking tray lined with Teflon paper. The layer height should be no thinner than 1.5–2 cm.

  3. Place in a preheated oven at 160°C (320°F) for 20 minutes (until lightly golden).

  4. For the cream, mix soft cottage cheese, Greek yogurt (I used a mix), and ricotta with sugar substitute.

  5. Once the sponge is ready, spread it with the cream, arrange berries and fruit, carefully roll it up, and refrigerate for at least 2 hours. Take out, brew tea or coffee, and enjoy!

Pancakes with cottage cheese

Pancakes with cottage cheese are a versatile dish suitable for breakfast, dinner, or as a snack. Enjoy them without worrying about extra pounds.

Ingredients:

for the dough:

  • milk (regular or alternative) — 150 ml;

  • egg — 1 piece;

  • rice flour — 30 g;

  • corn starch — 20 g;

  • vegetable oil — for frying;

  • salt, sugar substitute — to taste.

for the filling:

  • cottage cheese — 180 g;

  • soft cottage cheese (I used low-fat) — 50 g;

  • sugar substitute — to taste.

Instructions:

  1. Mix all ingredients for the dough until smooth.

  2. Fry on a preheated pan, lightly greased with oil.

  3. While the pancakes are cooking, you can quickly mix the filling in parallel.

  4. Spread the cottage cheese mixture on a ready pancake and roll it up as you like! I made traditional tubes.

  5. Place the filled pancakes in the pan and fry for about 1 minute each.

  6. You can add any topping; I used caramel from FitParad.
