Banana Pancakes: Perfect Breakfast Recipe from Voronezh

Banana prices have long ceased to be democratic. Once the cheapest winter fruit, it has become quite an expensive part of the diet. If you forgot to eat a banana on time and it lost its appetizing appearance, throwing it away is incredible waste. Overripe bananas are perfect in batter.

Ingredients (for 3 servings)
Banana (ripe, soft) — 1 pc.
Sour cream (10-15%) — 150 g
Chicken egg — 1 pc.
Wheat flour — 3 tbsp.
Sugar — 1 tbsp.
Baking soda — ½ tsp.
Salt — a pinch
Vegetable oil — for frying
Step-by-Step Recipe
In a bowl, mash the banana with a fork until smooth puree.
Add sour cream, egg, sugar, and a pinch of salt to the puree. Mix thoroughly until homogeneous.
Add baking soda and flour. Mix well again. The batter should be thick but pourable (like for regular pancakes).
Heat vegetable oil in a pan. Drop the batter with a tablespoon, forming small pancakes.
Fry on medium heat on both sides until golden brown.
Serve the pancakes hot with sour cream, honey, condensed milk, or berries. Enjoy your meal!
