If you’ve ever bought Korean-style carrots at the market, you know — this snack has a special taste: aromatic vinegar, piquant pepper, and that crunch that makes it a favorite at any feast. Making Korean-style carrots at home is as easy as pie. Specifically for 51.RU readers, a journalist from the publication shared her signature recipe.

Ingredients (for 4 servings)

  • Carrots — 500 g

  • Garlic — 3–4 cloves

  • Vegetable oil — 3 tbsp

  • 9% vinegar — 1.5 tbsp

  • Sugar — 1 tsp

  • Salt — 1 tsp

  • Coriander — ½ tsp

  • Black ground pepper — to taste

  1. Prepare the carrots.

  2. Peel and grate them on a special Korean-style carrot grater — into long, thin strips. If you don’t have such a grater, you can use a regular one, but the texture will be slightly softer.

  3. Salt and sugar them.

  4. Add salt and sugar to the carrots, gently mix with your hands, slightly pressing to make them juicier. Leave for 10–15 minutes.

  5. Make the aromatic dressing.

  6. In a pan, heat the oil (without letting it smoke), add ground coriander and both types of pepper. Quickly mix and remove from heat — the spices should release their flavor in the hot oil but not burn.

  7. Combine everything together.

  8. Add vinegar, pressed garlic, and the hot aromatic oil with spices to the carrots. Mix well.

  9. Let it marinate.

  10. Transfer the carrots to a container, cover with a lid, and refrigerate for at least 2–3 hours, or preferably overnight. During this time, the flavor will become rich and harmonious.

If you want to make the flavor richer, try adding a bit of soy sauce or a few drops of sesame oil — this will give the dish an Asian touch.
