Step-by-Step Recipe for Classic Onion Soup

Ingredients:

  • 4 large onions (preferably white onions, as they are usually sweeter);

  • 50 g of butter or olive oil;

  • 1 liter of meat or vegetable broth;

  • 100 g of cheese (for example, Gruyère or Emmental varieties);

  • salt and pepper to taste;

  • 4–6 slices of baguette.

How to prepare:

  1. Slice the onions into half-rings — this is important for even caramelization.

  2. Heat the oil in a pot over medium heat. Add the onions and sauté them, stirring constantly, over low heat for about 20–30 minutes, until they become golden brown. This is a key moment, as caramelization will give the soup a deep flavor and pleasant sweetness. And to prevent the onions from burning, use a pot with a thick bottom.

  3. Add the broth to the onions. After the soup boils, simmer over low heat for another 20–30 minutes. Season with salt and pepper.

  4. While the soup is cooking, toast the baguette slices in a pan or oven.

  5. Pour the finished soup into bowls, sprinkle with grated cheese, or place briefly in the oven in clay pots to melt the cheese. Serve the soup with the baguette.
